Nature's Most Spectacular Vegetable

Romanesco Cauliflower (Brassica oleracea) is one of the most visually stunning vegetables you can grow. Its mesmerising lime-green spiralling florets form a perfect natural fractal — each spiral following the Fibonacci sequence, the same mathematical pattern found in sunflower heads, nautilus shells, and pine cones. It looks almost too beautiful to eat — almost. Beneath that extraordinary appearance is a delicious, nutty, slightly sweeter flavour than regular cauliflower, with a firm texture that holds up beautifully in roasting, steaming, or pasta dishes.

Why Gardeners Love It

  • 💫 Jaw-dropping fractal spirals — a genuine showstopper in the garden and on the plate
  • 🔢 A living Fibonacci sequence — nature's own mathematics growing in your garden
  • 💚 Stunning lime green colour — unlike anything else in the vege garden
  • 🥦 Nutty, sweet flavour — milder and more delicate than standard cauliflower
  • 🍽️ Incredibly versatile — roast, steam, stir-fry, or serve raw
  • 🌟 A real conversation starter — guaranteed to impress at the dinner table

Growing Tips for New Zealand

Sow seeds in late summer to early autumn (February–April) into seed-raising mix, then transplant seedlings to a sunny, sheltered spot with fertile, well-drained soil once they reach 10–15 cm tall. Space plants 50–60 cm apart. Water regularly and feed with a balanced fertiliser through the growing season. Romanesco takes a little longer to mature than standard cauliflower — allow 75–90 days from transplanting. Harvest when the head is firm and the spirals are tight and well-formed.

💡 Grower's tip: Want bigger heads? Simply plant further apart — giving plants more space encourages larger, more impressive spirals.
