Growing Tips for New Zealand
Sow directly in early spring or late summer through autumn. In milder areas, sheltered winter sowings may also be possible. Spinach prefers cool conditions and can bolt quickly in hot weather or as days lengthen, so avoid relying on it as a midsummer crop.
Choose fertile, free-draining soil in full sun during cooler weather, or light shade as temperatures rise. Sow approximately 1β2 cm deep in rows about 25β30 cm apart. Keep evenly moist during germination, which usually takes around 7β14 days in suitable cool conditions. Hot soil can reduce germination.
Thin seedlings to approximately 10β15 cm apart for larger plants, or grow closer together for baby-leaf picking. Water consistently and keep weeds down. Sow small batches every few weeks during suitable weather for a steadier supply.
Harvest once leaves are large enough to use. Pick a few outer leaves from each plant without damaging the central growing point, or cut young plants for baby leaves. Enjoy promptly after picking for the freshest flavour and texture.
