Growing Tips for New Zealand
Sow directly from spring through late summer, extending into autumn in milder regions. Choose a sunny position with fertile, free-draining soil. Prepare a fine seedbed and avoid freshly manured soil.
Sow approximately 1–2 cm deep in rows about 25–30 cm apart. Keep evenly moist during germination, which usually takes around 7–14 days in suitable conditions, but can take longer in cool soil.
Beetroot seed clusters can produce more than one seedling. Thin seedlings to approximately 8–10 cm apart so roots have room to develop. Keep weeds down and water consistently, particularly during dry weather. Sow smaller batches every few weeks during suitable conditions to spread out the harvest.
Harvest young for tender baby beetroot, or lift roots once they reach your preferred size rather than leaving them to become oversized. If picking leaves while roots are growing, take only a few outer leaves from each plant. Twist off leafy tops after lifting, leaving a short length of stem attached to help limit bleeding during cooking.
